Mother Root is the modern-day revival of age-old drinking vinegars.
No alcohol required. Founded by Bethan Higson, a wine trade professional who is passionate about flavour. During her first pregnancy, Bethan was confronted by the lack of non-alcoholic drinks available, and was convinced there had to be more exciting options out there. She looked to the past for inspiration and discovered the intriguing world of "drinking-vinegars": tart and refreshing cocktail syrups with a history that dates back as far as Ancient Greece. These heritage drinks were experiencing a bit of a revival in the coolest bars in New York and London, and she began to make up her own recipes at her home in Peckham, London. She fell in love with the bold, complex and no-too-sweet flavours. And beyond that, finally here was a drink that felt like special treat. A drink to savour.
Mother Root's first flavour, a "Ginger Switchel" launched in December 2018 and sold out on the opening weekend. Since then you can find it in some of the top restaurants in London from Forza Win in Peckham, to The Ledbury in Notting Hill. Mother Root is made in small batches with the same level of care and attention as a craft alcoholic drink.
